One Pot Taco Soup 

This, my friends, is BY FAR may favorite soup in the history of the world!! Possibly my favorite meal ever… Or at least a very close second to my mama’s fried chicken.  This soup borders on a chili, is completely filling, incredibly delicious, only takes one pot, serves quite a few, cooks in one pot AND… Costs less than $10.  That’s a whole lotta awesomeness in one pot!  

I originally posted this recipe over a year ago and decided it was worth bringing back to the front page as we head into busy summer months where we all have so much on our plate!  This isn’t just a cold weather meal, you could easily make this on a camping trip or crock pot it before taking off for the day… The possibilities are endless.  You know what else? It tastes even better left over. 

  
Taco Soup

1lb Ground Beef

1 can Dark Red Kidney Beans

1 can Pinto Beans

1 can Rotel

1 can corn (drained)

2 cans (or 1 -28oz can) petite diced tomatoes 

1 can diced green chilies (I use mild, but you can use hot) 

1 packet taco seasoning 

1 packet ranch dressing seasoning

In a deep and heavy soup pot with a lid (I use my 7qt ceramic Dutch Oven), brown your ground beef. Once browned, adjust your heat to medium, add in the taco and ranch seasoning, mix through the beef. Now, add all of your cans, the only can you will drain is the corn.  Stir together, cover and let simmer for 30-45 minutes.  If you want and or need, you can let this simmer longer .. Simply being your heat down to a medium low. 

Serving:

Top with all the normal taco fixings!  We like crunching up tortilla chips, sour cream and shredded cheese.  Deeeeelicious!!
